Purity: 40, 60, 90
It is a distilled monoglyceride prepared from palm oils and fats. Commercial products usually are yellowish solid wax in flake or poweder form, without odor and toxicity, containing a small quantity of glycerol distearate and glycerol tristearate. GMS is oil soluble non-ionic surfactant with HLB value of 3.3-4.0.
Application:
Food grade:
1. As starch complexing agent in bread, pasta and potato powder.
2. Aerating agent and emulsifier in bakery gel formulations and ice-cream
3. Emulsifier and protein stabilizer in drink.
4. Water-in-oil emulsifier in margarine
5. Aerating agent and shelf-life extender in bakery and cake products, margarine and shortening.
6. Anti-tack agent in sugar confectionery.
